Chicken Thighs - Slim Fry

My second try using the SLIM FRY mode was to make crispy CHICKEN THIGHS.  


Ingredients:

2 bone-in chicken thighs
Italian seasoning, to taste
Salt, to taste
Pepper, to taste,
Olive Oil (about 1 tsp)

Process:

1.  Wash and dry thighs with a paper towel.
2.  Peel skin back and season underneath with a sprinkling of Italian seasoning, a little olive oil and pepper.  
3.  Pull the skin back over the thighs, sprinkle the skin with Italian seasoning, salt, and pepper.
4.  Drizzle olive oil on both sides -- not too much, though!  
5.  Place on the included Hot Plate
6.  Put on the tall rack in the upper oven, turn the knob to SLIM FRY, and chose DRUMSTICKS, 6 ea.
7.  Turn them over when the oven beeps, and repress START.

They were juicy, tender, and the skin was crispy -- perfect!

Hmmm, just saw there is another setting to try for these - The manual says you can use the Power Auto Cook mode in the upper oven, and choose "Bone-In Chicken Pieces" - I'll have to try that next time!
