Banana Muffins

INGREDIENTS

cups Gluten Free Bisquick baking mix
1 1⁄3 cups bananas, mashed (about 3 bananas)
2
tablespoons vegetable oil
1
teaspoon vanilla extract
1⁄2 cup mini-chocolate chips (optional)
Kisses chocolate chips (optional)
Mini Chocolate peanut butter cups (optional)
Pecans (optional)
Hazelnut spread (optional)
DIRECTIONS
1. Prep oven: Fill water reservoir. Preheat oven to 400F on Steam Bake Setting.
2. Combine all ingredients, except Bisquick.

3. When mixed, lightly stir
into the Bisquick mix. Batter will be thick.
Optional -Stir in chips, nuts, etc.
4. Fill paper-lined muffin cups 5/6 full. IF using kisses, fill cups 1/2 full, push in kiss, and complete filling. These don't rise much, so don't be afraid to fill them up!
5. Bake at 400F for 15-20 minutes. Use a toothpick in center to determine if done.
If it comes out clean after withdrawing from muffin, it is done.
6. Cool in pan 5 minutes, then remove to prevent overcooking.

Review:
I did not have high hopes for this, as I generally find banana bread to be dry, but was delighted by the results! It was easy to make, and the banana / chocolate chip muffins were moist, light, and airy! The amount of mini-chocolate chips was perfect, adding a hint of chocolate and not overwhelming the banana flavoring.
For fun, I added centers to 6 of the muffins. Five had a chocolate kiss, and in one I even added a small peanut butter cup! They were good, but to be honest, if you made these without the centers they would be delicious just with the recipe.
